Ingredients /nutrition
- 2 fl oz sunflower oil
- 4 chicken thighs and drumsticks
- 1 grated root ginger
- 5 crushed garlic cloves
- 1 finely chopped green chili
- 1/2 tsp turmeric
- 1 tsp ground cumin
- 1 tsp ground coriander
- salt and cayenne pepper to taste
- 1/2 cup water
- grated peel and juice of 1 lemon
- 4 oz chopped coriander leaves
Methods / instructions
- Heat oil in a large pan and brown chicken.
- Remove from heat and set aside.
- Stir in ginger and garlic to pan and sauté for a minute.
- Add remaining ingredients and return chicken.
- Cook for 28 minutes until chicken is tender.
- Serve immediately with boiled fragrant rice.
