Coriander & lemon chicken recipe

Ingredients /nutrition

  • 2 fl oz sunflower oil
  • 4 chicken thighs and drumsticks
  • 1 grated root ginger
  • 5 crushed garlic cloves
  • 1 finely chopped green chili
  • 1/2 tsp turmeric
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • salt and cayenne pepper to taste
  • 1/2 cup water
  • grated peel and juice of 1 lemon
  • 4 oz chopped coriander leaves

Methods / instructions

  1. Heat oil in a large pan and brown chicken.
  2. Remove from heat and set aside.
  3. Stir in ginger and garlic to pan and sauté for a minute.
  4. Add remaining ingredients and return chicken.
  5. Cook for 28 minutes until chicken is tender.
  6. Serve immediately with boiled fragrant rice.
