Chili chicken recipe

Ingredients /nutrition

  • 10 dried chili, soaked in hot water for 20 minutes and drained
  • 4 garlic cloves
  • 90 ml vegetable oil
  • 3 finely chopped shallots
  • 2 sliced onion
  • 1 red bell pepper, cut into cubes
  • 1 yellow bell pepper, cut into cubes
  • 1 green bell pepper, cut into cubes
  • 800 g chicken, cut into bite size pieces
  • 3 finely chopped garlic cloves
  • 4 1/2 tbsp tomato sauce
  • 100 ml water
  • 3 tomatoes, cut into wedges
  • 3/4 tbsp sugar
  • salt to taste

Methods / instructions

  1. Blend the first 2 ingredients to form a smooth paste using a blender or food processer.
  2. Heat up oil and stir fry shallots, onions and bell peppers until aromatic.
  3. Stir in paste and fry for 2 minutes.
  4. Add in remaining ingredients, stir well, cover with lid and simmer gently for 12 minutes.
  5. Serve hot with boiled rice.
