Ingredients /nutrition
- 1 tbsp sunflower oil
- 3 crushed garlic cloves
- 1 tsp minced chili
- 1 tsp cumin seeds
- 1 finely sliced kaffir lime leaf
- 2 grated carrots
- 2 grated zucchini
- 3 tbsp chopped parsley
- 3 tbsp chopped mint
- 100 g packet pappadums
- 1/2 cup light sour cream
Methods / instructions
- Heat oil in a frying pan and add in garlic, chili, cumin and lime leaf.
- Cook for 2 1/2 minutes and add in carrots and zucchini.
- Cook for a further 2 1/2 minutes.
- Remove from heat and stir in parsley and mint.
- Season to taste and set aside to cool.
- Microwave pappadums according to packet instruction.
- Top pappadum with a spoonful of carrot mixture and some sour cream.
- Ready to serve.
