Carrot & zucchini recipe

Ingredients /nutrition

  • 1 tbsp sunflower oil
  • 3 crushed garlic cloves
  • 1 tsp minced chili
  • 1 tsp cumin seeds
  • 1 finely sliced kaffir lime leaf
  • 2 grated carrots
  • 2 grated zucchini
  • 3 tbsp chopped parsley
  • 3 tbsp chopped mint
  • 100 g packet pappadums
  • 1/2 cup light sour cream

Methods / instructions

  1. Heat oil in a frying pan and add in garlic, chili, cumin and lime leaf.
  2. Cook for 2 1/2 minutes and add in carrots and zucchini.
  3. Cook for a further 2 1/2 minutes.
  4. Remove from heat and stir in parsley and mint.
  5. Season to taste and set aside to cool.
  6. Microwave pappadums according to packet instruction.
  7. Top pappadum with a spoonful of carrot mixture and some sour cream.
  8. Ready to serve.
