Stir fried mixed vegetables recipe

Ingredients (nutrition)

  • 2 1/2 tbsp sunflower oil
  • 1 crushed garlic clove
  • 1 peeled and chopped root ginger
  • salt and ground black pepper to taste
  • 2 thinly sliced carrots
  • 1 chopped green pepper
  • 1 cauliflower, broken into small pieces
  • 45 g bean sprouts
  • 160 ml chicken stock
  • 1 1/2 tbsp soy sauce
  • 3/4 tsp brown sugar

Preparation (instructions)

  1. Heat oil in a frying pan.
  2. Stir fry garlic, ginger for a minute and season with salt and pepper.
  3. Add carrots and stir fry for a minute.
  4. Stir in green pepper and cauliflower. Cook for 2 1/2 minutes.
  5. Add in bean sprout and stir fry for a minute.
  6. Add remaining ingredients, bring to boil, reduce heat and simmer for 4 1/2 minutes.
  7. Serve warm.
