Pineapple duck recipe

Ingredients (nutrition)

  • 2 cup duck meat, cut into thin slices
  • 2 tbsp cornflour
  • 1 tbsp water
  • 2 tbsp peanut oil
  • 4 tbsp pineapple cubes
  • 2 tsp sliced ginger sherry
  • 1/4 pt chicken stock
  • 1 pinch salt
  • 1 pinch sugar
  • 1/2 tsp soy sauce

Preparation (instructions)

  1. Mix duck meat, cornflour and water in a bowl. Set aside.
  2. Heat 1 tbsp oil in a non stick frying pan.
  3. Stir fry pineapple cubes for a minute. Set aside.
  4. Pour in remaining oil and cook meat for 3 1/2 minutes.
  5. Add remaining ingredients and cook for a minute.
  6. Stir in reserved pineapple and give a good toss.
  7. Serve warm.
