Ingredients (nutrition)
- 70 ml peanut oil
- 3 crushed garlic cloves
- 1 kg cooked lobster meat flakes
- 1 peeled and chopped root ginger
- 130 g minced lean pork
- 250 ml chicken stock
- 1 1/2 tbsp rice wine
- 1 tbsp soy sauce
- 1 tsp sugar
- 1 tbsp cornflour with 2 tbsp water
- 2 beaten eggs
Preparation (instructions)
- Heat 35 ml oil in a heavy skillet and stir fry garlic for a minute.
- Add in lobster and stir fry for a further 4 minutes.
- Set aside and keep warm.
- To make the sauce, heat remaining oil and stir fry ginger and pork until cooked.
- Pour in stock and bring to boil.
- Add remaining ingredients except eggs.
- Remove from heat and whisk in eggs.
- Pour mixture over lobster.
- Serve immediately.
