Ingredients (nutrition)
- 1 oz bird's nests
- 2 pt chicken stock
- salt to taste
- 1 oz finely chopped uncooked chicken meat
- 1 tsp cornflour
- 1 tbsp water
- 1 beaten egg white
- 1 oz finely chopped lean boiled ham
Preparation (instructions)
- To prepare the bird’s nest, cover with cold water and soak overnight.
- Drain bird nest, rinse and drain again.
- In a pot, add in bird’s nest and stock.
- Bring to boil, reduce heat, cover and simmer gently for an hour.
- Adjust taste by adding salt if required.
- Add chicken meat and cook for 3 1/2 minutes.
- In a bowl, combine corn flour with water and pour into pot.
- Boil for a further 1 minute and remove from heat.
- Whisk in egg white and ladle to serving bowls.
- Top with ham and serve instantly.
