Bird’s nest soup recipe

Ingredients (nutrition)

  • 1 oz bird's nests
  • 2 pt chicken stock
  • salt to taste
  • 1 oz finely chopped uncooked chicken meat
  • 1 tsp cornflour
  • 1 tbsp water
  • 1 beaten egg white
  • 1 oz finely chopped lean boiled ham

Preparation (instructions)

  1. To prepare the bird’s nest, cover with cold water and soak overnight.
  2. Drain bird nest, rinse and drain again.
  3. In a pot, add in bird’s nest and stock.
  4. Bring to boil, reduce heat, cover and simmer gently for an hour.
  5. Adjust taste by adding salt if required.
  6. Add chicken meat and cook for 3 1/2 minutes.
  7. In a bowl, combine corn flour with water and pour into pot.
  8. Boil for a further 1 minute and remove from heat.
  9. Whisk in egg white and ladle to serving bowls.
  10. Top with ham and serve instantly.
