Barbecue spareribs recipe

Ingredients (nutrition)

  • 12 kg spare ribs, cut into bite size pieces
  • 5 1/2 tbsp oyster sauce
  • 3 tbsp dark soy sauce
  • 2 tbsp dry sherry
  • 1 tbsp brown sugar
  • 1/4 tsp five spice powder

Preparation (instructions)

  1. Combine well all ingredients except water in a big bowl and cover.
  2. Allow to marinate for 1 1/2 hours.
  3. Reserve sauce and transfer spare ribs on a rack in a roasting pan containing 580 ml water.
  4. Cook in oven at 180 degree C for half an hour.
  5. Turn ribs and coat occasionally with sauce.
  6. Cook for a further 25 minutes.
  7. Serve hot.
