Ingredients (nutrition)
- 8 oz tapioca
- 7½ oz soft brown sugar
- ½ tsp salt
- 1½ pt water
- 4 oz grated coconut
- 1½ tsp caster sugar
Preparation (instructions)
- Add tapioca, brown sugar, salt and water in a pot and bring to boil.
- Reduce heat and simmer gently for about 12 minutes until mixture is thick and tapioca is tender.
- Remove from heat and pour into a lightly greased dish. Set aside to cool.
- Spoon out mixture and roll on coconut and caster sugar.
- Serve immediately.
