Ingredients (nutrition)
- 1½ lb white filleted fish chunks (haddock or cod)
- 1¼ tsp turmeric powder
- ¾ tbsp soy sauce
- 1½ tbsp tamarind pulp
- 5 tbsp hot water
- 6½ tbsp vegetable oil
- 2 peeled and sliced onions
- 1½ tsp chili powder
Preparation (instructions)
- Rub fish with turmeric and soy sauce. Set aside.
- Place tamarind pulp in a small bowl of hot water and compress to extract the flavor. Strain and reserve tamarind liquid.
- Heat oil in a non stick pan and saute onions.
- Remove onions and drain on kitchen paper towel. Set aside.
- Pour away half the amount of the oil in pan and add in chili powder.
- Increase heat and stir in fish for 1 minute.
- Add in tamarind liquid, cover and simmer gently for 18 minutes.
- Garnish with reserved fried onions and serve hot.
