Ingredients (nutrition)
- 8 fl oz coconut milk
- 12 fl oz water
- 4 crushed garlic cloves
- 2 finely chopped chilies
- 1 chopped onion
- 1 tsp turmeric powder
- 1 tsp grated ginger
- salt and ground black pepper to taste
- 1 tbsp lemon juice
- ¾ tbsp soy sauce
- 1 lb peeled and sliced sweet potato
Preparation (instructions)
- In a saucepan, add all ingredients except sweet potatoes.
- Bring to boil, reduce heat and simmer for 4 minutes.
- Add in sweet potatoes and simmer for a further 22 minutes.
- Serve instantly.
