Spiced coconut potato recipe

Ingredients (nutrition)

  • 8 fl oz coconut milk
  • 12 fl oz water
  • 4 crushed garlic cloves
  • 2 finely chopped chilies
  • 1 chopped onion
  • 1 tsp turmeric powder
  • 1 tsp grated ginger
  • salt and ground black pepper to taste
  • 1 tbsp lemon juice
  • ¾ tbsp soy sauce
  • 1 lb peeled and sliced sweet potato

Preparation (instructions)

  1. In a saucepan, add all ingredients except sweet potatoes.
  2. Bring to boil, reduce heat and simmer for 4 minutes.
  3. Add in sweet potatoes and simmer for a further 22 minutes.
  4. Serve instantly.
