Ingredients (nutrition)
- 2 lb pork chunks
- 2½ tbsp soy sauce
- 1 tsp ground black pepper
- 1½ in peeled ginger
- 4 peeled and crushed garlic
- 3 peeled and crushed onions
- 1/3 pt hot water
- ¾ tsp chili powder
- 4½ tbsp sunflower oil
Preparation (instructions)
- In a bowl, combine pork together 1½ tablespoons soy sauce and pepper. Set aside.
- Pound half the amount of ginger and combine with garlic, onion and water.
- Strain onion mixture and reserve both pounded mixture and liquid. Set aside.
- Stir in chili powder in reserved liquid. Set aside.
- Slice remaining ginger into thin strips.
- Heat oil in a heavy skillet and stir in thinly sliced ginger and pork.
- Cook until brown and add in remaining soy sauce, chili mixture and pounded mixture.
- Cover and simmer gently for 45 minutes.
- Serve hot with fragrant rice or coconut rice.
