Ingredients (nutrition)
- 8½ oz white filleted fish chunks (haddock or cod)
- 1¼ tsp salt
- ¾ tsp turmeric powder
- 2½ tsp cooking oil
- 2 peeled and crushed garlic cloves
- 1 peeled and pounded onion
- ½ in peeled and pounded ginger
- ¼ tsp chili powder
- 5 chopped tomatoes
- 1 tbsp soy sauce
- ¼ tsp shrimp paste
- 2 pt cold water
- 6 springs coriander leaves
- 2 tbsp dried tamarind pulp
- 5 tbsp hot water
- 12 oz peeled and thinly sliced white radish
Preparation (instructions)
- Rub fish with salt and turmeric. Set aside.
- Heat oil in a saucepan and saute garlic, onion, ginger and chili powder.
- Mix well for 3 minutes and stir in tomatoes, soy sauce, shrimp paste, cold water and coriander leaves.
- Bring to boil, reduce heat and simmer gently for 12 minutes.
- Meanwhile, place tamarind pulp in a small bowl of hot water and compress to extract the flavor.
- Strain tamarind liquid into the saucepan and add in radish.
- Simmer for another 12-15 minutes.
- Serve hot.
