Ingredients (nutrition)
- 1 tbsp peanut oil
- 4 roughly chopped garlic cloves
- 1½ lb pumpkin, cut into cubes
- 4 cups chicken stock
- salt and pepper to taste
- ½ cup finely sliced basil leaves
Preparation (instructions)
- Heat oil in a saucepan and brown garlic for 4 minutes.
- Add in pumpkin cubes and chicken stock.
- Bring to boil, reduce heat, cover and simmer gently for 28 minutes.
- Transfer mixture to a blender or food processor and puree until smooth and creamy.
- Season well with salt and pepper.
- Ladle to serving bowls and garnish with basil leaves.
- Serve hot.
