Pumpkin soup recipe - Schwe Payon Hinjo

Ingredients (nutrition)

  • 1 tbsp peanut oil
  • 4 roughly chopped garlic cloves
  • 1½ lb pumpkin, cut into cubes
  • 4 cups chicken stock
  • salt and pepper to taste
  • ½ cup finely sliced basil leaves

Preparation (instructions)

  1. Heat oil in a saucepan and brown garlic for 4 minutes.
  2. Add in pumpkin cubes and chicken stock.
  3. Bring to boil, reduce heat, cover and simmer gently for 28 minutes.
  4. Transfer mixture to a blender or food processor and puree until smooth and creamy.
  5. Season well with salt and pepper.
  6. Ladle to serving bowls and garnish with basil leaves.
  7. Serve hot.
