Pork & pumpkin stew recipe

Ingredients (nutrition)

  • 2 lb pork cubes
  • 1 tbsp soy sauce
  • 1 tsp salt
  • 1 chopped onion
  • 1 tbsp finely chopped ginger
  • 1 tbsp finely chopped garlic
  • 1½ tbsp corn oil
  • 1½ tsp chili flakes
  • 1 tsp shrimp paste
  • ¾ tsp turmeric powder
  • 2 cups water
  • 1 lb pumpkin cubes

Preparation (instructions)

  1. In a bowl, combine together pork, soy sauce and salt. Cover with cling film and allow to marinate for 1½ hours.
  2. In a heavy saucepan, add in pork with its marinade, onion, ginger, garlic, oil, chili flakes, shrimp paste, turmeric and 1 cup of water.
  3. Bring to boil, reduce heat, cover and simmer for 45 minutes.
  4. Pour in remaining water and stir in pumpkin.
  5. Cook for a further 20 minutes.
  6. Serve warm with boiled white rice.
