Ingredients (nutrition)
- ¼ cup peeled slivered ginger
- 1/3 cup hot water
- 1 ½ lb pork chunks
- 2 tbsp red curry paste
- ¼ cup light brown sugar
- 2½ cups water
- 2 tsp turmeric powder
- 1 tbsp soy sauce
- ¼ cup finely sliced shallots
- ¼ cup lime juice
- 2 tbsp chopped garlic
Preparation (instructions)
- In a small bowl, combine ginger with hot water. Set aside.
- In a heavy skillet, cook pork with curry paste and brown sugar.
- Stir constantly for 16 minutes.
- Stir in turmeric, soy sauce and water.
- Bring to boil, reduce heat, uncover and simmer for 50 minutes.
- Add in ginger with its water, shallots, lime juice and garlic.
- Simmer for about 4 minutes.
- Serve immediately with steamed fragrant rice.
