Pork curry recipe

Ingredients (nutrition)

  • ¼ cup peeled slivered ginger
  • 1/3 cup hot water
  • 1 ½ lb pork chunks
  • 2 tbsp red curry paste
  • ¼ cup light brown sugar
  • 2½ cups water
  • 2 tsp turmeric powder
  • 1 tbsp soy sauce
  • ¼ cup finely sliced shallots
  • ¼ cup lime juice
  • 2 tbsp chopped garlic

Preparation (instructions)

  1. In a small bowl, combine ginger with hot water. Set aside.
  2. In a heavy skillet, cook pork with curry paste and brown sugar.
  3. Stir constantly for 16 minutes.
  4. Stir in turmeric, soy sauce and water.
  5. Bring to boil, reduce heat, uncover and simmer for 50 minutes.
  6. Add in ginger with its water, shallots, lime juice and garlic.
  7. Simmer for about 4 minutes.
  8. Serve immediately with steamed fragrant rice.
