Gourd leaves with bean paste recipe

Ingredients (nutrition)

  • 1½ tbsp vegetable oil
  • ½ tsp turmeric powder
  • 1 sliced onion
  • 2 chopped tomatoes
  • 2 green chilies
  • 4½ cups gourd leaves, cut into bite size
  • salt to taste
  • ½ tsp hot bean paste

Preparation (instructions)

  1. Heat oil in a large skillet and add turmeric and onion.
  2. Cook until onion is clear and stir in tomatoes and chilies.
  3. Cover and simmer until tomato juice is incorporated.
  4. Add in gourd leaves and salt.
  5. Toss lightly and cook until greens are tender.
  6. Stir in bean paste and give a quick toss.
  7. Serve immediately.
