Ingredients (nutrition)
- 1 eggplant (aubergine)
- 1 tbsp sunflower oil
- 1 peeled and sliced onion
- 1 peeled and crushed garlic clove
- ½ in peeled and pounded ginger
- salt to taste
Preparation (instructions)
- Place eggplant/aubergine on a lightly greased baking sheet and bake in a preheated oven at 425 degree F for an hour. Remove from oven and set aside to cool.
- Peel aubergine skin, scoop and mash flesh with spoon. Set aside.
- Heat oil in a skillet and brown onion and garlic.
- Add in reserved aubergine flesh, ginger and season with salt.
- Cook for 8 minutes and serve immediately.
