Fried eggplant recipe - Hkayan-thi Gyaw

Ingredients (nutrition)

  • 1 eggplant (aubergine)
  • 1 tbsp sunflower oil
  • 1 peeled and sliced onion
  • 1 peeled and crushed garlic clove
  • ½ in peeled and pounded ginger
  • salt to taste

Preparation (instructions)

  1. Place eggplant/aubergine on a lightly greased baking sheet and bake in a preheated oven at 425 degree F for an hour. Remove from oven and set aside to cool.
  2. Peel aubergine skin, scoop and mash flesh with spoon. Set aside.
  3. Heat oil in a skillet and brown onion and garlic.
  4. Add in reserved aubergine flesh, ginger and season with salt.
  5. Cook for 8 minutes and serve immediately.
