Coconut spiced fruit rice recipe

Ingredients (nutrition)

  • 1 tsp peanut oil
  • 1 cup chopped onion
  • ½ cup water
  • 4 cup cooked white rice
  • 4 tbsp grated coconut
  • 4 bay leaves
  • ¾ tsp ground cinnamon
  • ¼ tsp curry powder
  • ¼ tsp turmeric powder
  • ¼ tsp ground clove
  • salt and ground black pepper to taste

Preparation (instructions)

  1. In a non stick pan, add oil, onion and 3 tablespoons water.
  2. Cook under high heat until onion browned.
  3. Add remaining water and ingredients.
  4. Reduce heat, cover and cook until heated through.
  5. Remove bay leaves and serve immediately.
