Coconut rice recipe

Ingredients (nutrition)

  • 1 lb long grain rice
  • water
  • 3 oz coarsely chopped creamed coconut
  • 1 peeled and quartered onion
  • 1 bay leaf
  • 1 cinnamon stick
  • 1 clove
  • 1 cardamoms
  • ½ tsp salt
  • ¾ tsp vegetable oil

Preparation (instructions)

  1. Measure rice using cups and transfer to a saucepan.
  2. Measure 2 cups of water for every cup of rice and pour into saucepan.
  3. Add remaining ingredients, bring to boil and cook for approximately 18-20 minutes.
  4. Serve hot with curry or other gravy.

Servings: 5-6
