Chicken curry recipe

Ingredients (nutrition)

  • 3 lb chicken chunks
  • 2 tbsp soy sauce
  • ¾ tsp salt
  • ¾ tsp turmeric powder
  • 3 peeled onions
  • 4 peeled garlic cloves
  • 1 in peeled and pounded ginger
  • 1½ tsp chili powder
  • 4½ tbsp vegetable oil
  • 2 bay leaves
  • 1 cinnamon stick
  • 1 pt water

Preparation (instructions)

  1. In a large mixing bowl, combine together chicken, soy sauce, salt and turmeric.
  2. Pound 1 onion and 3 garlic cloves with ginger and chili powder and rub on chicken.
  3. Thinly slice remaining onions and garlic and stir in heated oil in a pan.
  4. Sweat onions and garlic for 8 minutes, stir in chicken and pounded mixture.
  5. Cook for 8-10 minutes until chicken is browned.
  6. Add in bay leaves, cinnamon and water.
  7. Bring to boil, reduce heat, cover and simmer for 30 minutes.
  8. Serve hot with steamed rice.
